Not that I really need an excuse to make lamb, but it\u2019s pretty convenient. Start to finish, this shouldn\u2019t take you more than 30 minutes, so not only is it really tasty, but also super easy. &#8211; <a href=\"https:\/\/www.wearethegoodlife.com\/blog\/family\/michael-paddock\/\">Michael Paddock<\/a><\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center\">Ingredients:<\/p>\n<p style=\"text-align: center\">1 Frenched Rack of Lamb. (get your butcher to french it if needed \u2013 you can do it yourself, but it\u2019s a pain in the ass)<br \/>\n1 Tbsp olive oil<br \/>\n2 or 3 Tbsp Dijon mustard<br \/>\n\u00bd Cup dried Herbs de Provence (dried mixture of rosemary, thyme, oregano, marjoram, etc)<br \/>\nSea salt an fresh cracked pepper<\/p>\n<p style=\"text-align: center\">Preheat oven to 400 F<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"alignnone size-full wp-image-5826\" alt=\"\" src=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-2.jpg\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-2.jpg 800w, https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-2-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: center\">Step 1:<\/p>\n<p style=\"text-align: center\">Heat the olive oil in an oven-proof skillet to medium high. Coat both sides of the Lamb with salt and pepper.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"alignnone size-full wp-image-5827\" alt=\"\" src=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-3.jpg\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-3.jpg 800w, https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-3-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: center\">Step 2:<\/p>\n<p style=\"text-align: center\">When the oil is up to temperature, place the Lamb in the skillet fat side down first, and give it a good sear until it\u2019s nice and golden,<br \/>\n2 to 3 minutes.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"alignnone size-full wp-image-5828\" alt=\"\" src=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-4.jpg\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-4.jpg 800w, https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-4-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: center\">Flip the rack over and get the other side of the meat. Remove from heat and place the rack on a clean surface.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"alignnone size-full wp-image-5829\" alt=\"\" src=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-5.jpg\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-5.jpg 800w, https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-5-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: center\">Step 3:<\/p>\n<p style=\"text-align: center\">With a basting brush, coat the seared surfaces with the Dijon mustard, and then coat with the dried Herbs de Provence.\u00a0Return the rack to the skillet, fat side down, and place in the oven for 8-10 minutes.<\/p>\n<p style=\"text-align: center\"><img decoding=\"async\" class=\"alignnone size-full wp-image-5830\" alt=\"\" src=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-6.jpg\" width=\"800\" height=\"533\" srcset=\"https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-6.jpg 800w, https:\/\/www.wearethegoodlife.com\/blog\/wp-content\/uploads\/2014\/04\/RACKofLAMB-6-300x199.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p style=\"text-align: center\">Step 4:<\/p>\n<p style=\"text-align: center\">After 8 minutes, remove the pan from the oven and place the rack on a plate to rest. This will give you nice, rare meat (how good lamb should be eaten). If you like you meat medium rare, give it some more time, but keep an eye on it so you don\u2019t over cook it.
